Lizzie Borden's Meatloaf Recipe
Lizzie’s meat loaf
1 lb. steak
1/2 lb. pork steak
1 egg
1 small onion
3 soda crackers
herbs
salt and pepper
Grease tin. Cover loaf well with hot water and bake about one hour.
(This recipe might be best left to the experienced, adventurous cook! Obviously, the meat must be ground to make Lizzie’s meatloaf, and all ingredients mixed together. As for oven temperature and cooking time, I would try approximately 350 or 400 degrees. The water used in this recipe produces a steamed loaf. The soda crisps used, I would suspect, are today’s saltine crackers, but wonder if they were sold in sheets then, since three doesn’t seem to be enough for 1-1/2 pounds of meat. I wouldn’t cover the loaf since it may boil for too long without evaporation, but I would keep an eye on it and be wary of water boiling over into the oven. Best of luck with this one!)
